I spoke to you about the food trucks revolution in India (CLICK HERE TO READ) and then few food trucks in Mumbai (CLICK HERE TO READ) so you could give it a try but today we are going to know more about one of them. Lets get 'Behind the scenes' of their amazing business... BIG BITE BURRITO logo   Kunal Patel and Nived Rawool are two friends who passed out from Rizvi College of Hotel Management and Catering Technology in the year 2011. After their education was competed they worked at various hotels in Mumbai. Soon they got an opportunity to go to Miami, USA where they worked for a Carnival Cruse Liner that gave them an opportunity to visit Mexico at-least once a week. They learnt their Mexican food skills from locals and understood the huge potential the food truck business had and wanted to bring home this business idea. This made more sence as Mexican cuisine is kinda close to the Indian pallet Big bite burrito With the business plan and money saved they came back to India in Nov 2014. Family and friends supported their idea which gave them the confidence to venture into this business. Big Bite Burrito does not only server burrito's but they also serve great burgers, sea food, barbecue, sides etc. Their concept is based on Mexican cuisine and their USP is Burritos. They have tweaked the flavours to suite Indian taste which is made with locally available ingredients and they try to maintain the flavours as close to the authentic taste. Their locations are selected to target customers who are usually youngsters and they keep modifying their menu every month to keep their customers coming back for more. Social media has played an important roll in marketing their concept from the very beginning. Their success mantra is always 'serve what is unique and new to their customers'. They had launched their food truck in Feb 2015 and plan to open a 2nd food truck by 2016.

Make the perfect tea every time with this simple recipe ....

Yesterday I talked about an amazing experience I had at trying tea at this amazing place in Matunga West called " Mahesh Teahouse" .I had also promised you guys that I would try to recreate it and I finally made it !!! its very close to Mahesh .S. Shinde Chai Recipe…. After snoozing my alarm more than 5 times, I finally got up around 9.45am  and suddenly realised I had to try making his chai, so I could share it with you guys :) I started by reading the Chai recipe he told me how he made it… but the issue was that he gave me the recipe that made tea for approx. 20 people…. So I sat for half an hour figuring out the math.. Don’t judge me :(  lol it was early ! yes 9:45 am is early I am a night person some of you may understand…. Give me a break !   So anyway too much about me after trying to perfect the tea 6 times the 7th time I finally made it really close… Below is a step-by-step recipe with pictures of me making my grand mom’s chai….   Prep Time: 5 minutes Cook time: 10 minutes Serves: 2 to 3 people # INGREDIENTS: DSCN0302
  1. Water: 1 small cup/250 ml
  2. Milk: 1 Big cup/500ml (If you like your tea less milky add 350 ml milk)
  3. Tea Leaves: 1 ½ Tsp (Society tea)
  4. Sugar: 1 ½ Tsp
  5. Cardamom (elaichi): 1 clove
# How to make it… #Add water to the utensil and let it simmer on medium flame.DSCN0275 #When the water boils, add 1 ½ teaspoon of tealeaves. (If you like your tea strong add half teaspoon more) DSCN0277 #After that add 1 ½ teaspoon of sugar. (If you like your tea sweet add more and visa versa). DSCN0285 # Let it simmer for a minute and add one crushed cardamom (elaichi) (Even if you add half its fine) DSCN0290 # Add Milk and let it stay on medium flame. DSCN0292   # Let it boil for few minutes and remove it off the flame pour it into the glass.  DSCN0296 Note: If the weather is Cold, add little crushed ginger. Chai is something I need every morning after waking up. If I don’t get it then I am the worst person to meet ! I can be your worst Nightmare :p  . This obsession with tea is shared by all the members of my family, let it be my 10 year old sister, or my 80 year old grandmother. DSC_0731 As a child I have vivid memories of going to my grandmothers home, and the moment we would step into her house there was a overwhelming aroma of fresh tea that was brewing just for us.Perfect for a cold winters evening holding onto the cup and sipping on amazing tea ! Everyone is a little partial about how their mothers or grandmothers cook, but her tea can make any non tea drinker into a tea addict !!! DSCN0264 But there's a reason why I am bringing up Chai all off a sudden .I had a really late night yesterday so it was difficult to wake up ! So today  morning I woke up around 9ish and wanted to have a proper street side tea... Thats when I remembered my uncle talking about an epic tea stall called "Mahesh Teahouse" .Turned out the stall was just a few minutes away from my house, so I went there... DSCN0265 This place is at Matunga West, when I reached Mahesh Teahouse there was a strange sense of familiarness something about the place that felt at home!  I couldn't  understand what it was but I was suddenly happy and I  hadn't even taken the first sip ! So I asked for one special  "Cutting"(for those who don't  know it means half glass tea ). So when I finally took my first sip, waves of emotions hit me!! I couldn't believe it! The tea tasted exactly as my grandmothers tea tasted when i was a kid ! Everything was clear, I knew why I  was so happy when I came to this tea stall it reminded me of all the happy times in childhood I spent at my grandmothers .I think only food has the power to make you experience so may emotions at once ! Don't you agree ? I found the need to know know more about Mahesh and his store and of course his secret recipe :) DSCN0267 Mr. Mahesh .S. Shinde. worked at an Udipi restaurant 10 years back, He recalls the day the restaurant he worked at shut down ! He says he was very scared and didn't know how he would survive ! But as every story goes there was a golden light ! One fine day while he just sat at home sipping Chai he got the awesome idea of starting his own teahouse. He used his savings to rent this small place and started making his own tea and serving it to people, its been 9 years he is running this place and this small teahouse is so famous around this area that politician’s, nagar sevaks, business men order tea from him. Vakola's best VADA PAV aka Mani

At around 5.30ish in the evening, near City Bakery in Vakola, a small crowd gathers, If you manage to get through it, you’ll find a tiny south Indian man dressed in shirt, folded pants and an apron, frying some yummy vadas in hot oil with an amazing speed. While doing all this he doesn’t forget to wish his customers “good evening”. Every customer waits patiently to get his or her hot and crispy vadas.

K . Subramanian aka Mani or Anna has been running the stall since past 20 years. At the age of 16, Mani started working as a helper at Turning Point after which he would ] learn to cook from the chef. He quit the job after 15 years, to take care of his wife, who was facing health issues. One of mani’s friend helped him setup the stall where he makes the most delicious vada pavs for two hours every day.

What makes his vadas so delicious?? He personally handpicks the potatoes and other ingredient and has this special and secret masala, which he adds to the mixture to make it taste that good. His regular customers and me say that the quality of his vadas hasn’t lowered little. The only complaint the regular customers have is that he isn’t open on a regular basis.
